I am Hispanic.
I am a Vegan.
So I am a bit of an oddity.
When people find out that we have been vegetarian for 40 years and eat a vegan diet a variety of questions always follow. The most common being:
“Vegan? What do you eat?”
I get questioned so much about diet that I decided to build the Simple Powerful Health website just so people can get some common sense answers about a vegan diet. I also decided to write a little ebook, a simple guide to a Plant-Based Diet that will come out in the near future.
This article answers the question “What do you eat for a vegan breakfast?”
Here is the typical nutritional start to my day:
To start my day I always drink 1-2 quarts of water before I ever eat or drink anything else. This cranks up my energy and my elimination.
I usually have a cup of herbal tea sometime during the morning.
I follow that by some kind of a smoothie, chocked full of whatever fruits I may have in the house. It is going to be different everyday. I do not usually put a whole lot of extras into my smoothie. I do not add oatmeal and protein powder and fiber and milk and yogurt and honey and chia and…..on and on! You end up having a high-protein, high-fat smoothie and you will not get the results you are looking for. I concentrate on using fruit and water, sometimes some greens like lettuce, spinach, kale or celery. But that is pretty much it! And I make enough to make it a meal. Today I made a smoothie with 5 bananas, pineapple, a mango, 2 oranges and water.
Later on I will follow that with a large fruit salad, again with whatever fruit I have in the house. The picture above is of my fruit salad today. Everything is so simple. No recipes are ever required. All ripe fruits are sweet and delicious so you can not make a mistake!
Some suggestions:
Make sure you eat enough. If your entire breakfast is a small smoothie you are going to starve later and probably grab something that is not a healthy choice. You never have to worry about calories on this diet. So eat until you are satisfied!
Never make a smoothie with milk. Cows milk is perfect, for cows. I am human and so are you! Besides a vegan does not consume animal products, so milk would automatically be off my list.
Eating a lot of fruit will give you a lot of energy.
Most people would think that adding nuts would be the perfect healthy thing to accompany the fruit. A small handful of nuts a day is no big deal, but you do not want to be eating a lot of high fat foods if you are consuming substantial fruit. Yes, nuts are a high fat food! So limit your consumption of nuts and make them raw if you have them.
To recap: The early part of the day I concentrate on hydration and drinking water, tea, a big smoothie and eating a lot of fruit!
All delicious, all high nutrition, all high carb, all high water content, all high energy!
All simple to make!
