Do you like tacos?

Who does not like a warm, fresh tortilla, with a delicious filling and topped with salsa?

One of the hardest things for people making a dietary change, especially if going vegan or vegetarian, is thinking that they will have to give up their favorite foods. That is not necessarily true! You do not have to leave your culture behind to be healthy. You can make many of your favorite dishes by just substituting different ingredients for the typical ones.

I was looking at the PETA (People for the Ethical treatment of Animals) website the other day and I came across an article called “The Definitive List of Vegan Tacos”. Who does not like tacos? It got my attention and I had to take a look at the recipes. You always need new food ideas, even me and I have been vegetarian for 40 years. These are not only new ideas, they are healthy ideas too.

Once you have the idea in mind, you can adjust them to suit your palate and lifestyle. For example personally I do not like to cook with oil and I do not look for meat substitutes or Vegan Cheeses. So if a recipe has those in them I just substitute something else based on my personal tastes. Nothing is carved in stone here! If you do want something that replaces the taste and texture of meat, but not an animal product, there are plenty in the markets now days. In these recipes you will find a some of those type of products and most of them taste pretty darn good.

Being Vegan or Vegetarian does not change what I am, Hispanic!

You do not have to put your Customs and History to the side. I am proud of my culture, history and customs. Our food is delicious, but now I make it a little different, with my health, the health of my family, the health of the animals and that of the planet in mind.
